Troubleshooting
My igniter is not working.
- Make sure your gas (propane or natural) is connected to grill and turned on.
- Replace the AA battery in your igniter box. To replace your
battery unscrew the red igniter button on the top of you Vidalia
Grill faceplate. The red igniter button is beside your burner
knobs. Once you have unscrewed the igniter button a box containing
the AA battery will drop down from underneath the faceplate.
Remove the battery cover and replace the battery. Put the battery
cover back on; place the igniter button back through the hole
in the faceplate and screw red igniter button back on to faceplate.
Verify that the wire running from the igniter box to your probe
is connected. Now try and ignite your grill.
- If you competed steps 1 & 2 and your grill will not ignite
try manually lighting your grill. If your grill will still not
ignite repeat step one. If your grill ignites manually but not
with the igniter button call the Vidalia Grill dealer where
you purchased your grill and have them come out and check your
grill.

I can't get the temperature over 150 degrees.
- Reset the propane regulator by turning off your propane tank
(turning Propane tank knob on top to the right or clockwise).
- Disconnecting (unscrew) the regulator from the propane tank.
Now reconnect the regulator to the propane tank. This will reset
you regulator. Turn your propane tank on (turning propane tank
knob on top to the left or counter clockwise). Light your grill
and see if temperature rises.
- If temperature still will not rise above 150 degrees replace
your propane tank. Occasionally you will get faulty gas. Most
reputable propane gas dealers will replace your tank free of
charge.

What is the best way to clean my Vidalia Grill?
- Wet the outside of the grill with water.
- Wash the outside with a mild grease cutting dishwashing detergent
with soft cloth or sponge.
- Towel dry.
- Spray generous amount of WD 40 directly to exterior grill
surface and rub in with soft cloth. Excessive amounts of WD
40 will burn off the next time you use your grill.

- Spray grill with water weekly

Cooking Performance
What is the ideal temperature for cooking indirect?
Ideal cooking temperature is 400 - 425 degrees for all meats cooked
on the indirect side of your Vidalia Grill.

When cooking on the direct side, do I need to add water to the indirect side?
For ideal cooking performance always add water. This will provide
moisture to the grill even when cooking on the direct side allowing
your meat to stay moist. If you plan to sear the meat and then move
it to the indirect side to finish cooking you may want to add a
marinade to enhance the flavor.

What is the proper mix for my marinade chamber?
Always start with water as your base. For your average cookout (2
- 4 hours) ½ inch of water and then add 1 - 2 cups of marinade.
Marinade can be any liquid like apple cider vinegar, worcestershire
sauce, beer, red wine, …etc). We recommend apple cider vinegar.

What marinade do you recommend for consistent flavor.
The Vidalia Cooking Team always uses apple cider vinegar for all
its cooking demonstrations. Whether we are cooking pork, fowl, steaks,
or seafood. There are plenty of good marinades available depending
on the taste you are trying to achieve.

How do I cook with Charcoal?
The Vidalia Grill is designed to cook with charcoal. There are a
couple of things to keep in mind when cooking with charcoal:
- Because of the airflow, charcoal will cook very hot. Therefore
you will not need to add as much charcoal as you may be a custom
to using. Usually two or three handfuls of charcoal will keep
the temperature between 400 - 450 degrees.
- Use the gas burners to ignite your charcoal.
It is not necessary to clean the ash after every use. Usually after
two or three cookings with charcoal you will want to clean it by:
- Sweeping ash off of briquettes and burners into the pull-out tray below.
- Pull tray out and empty.
